Stuffed Bell peppers- Hyderabadi Style Prep-Time:20-25 min Serves:4


1)Cut the top of the capsicum]/Bell pepper (4 medium sized) about 1 inch from the top preserve the caps, wash the potatoes(5 medium sized) and add them to hot boiling water for 10-12 min(or until u see the skin on potato is wrinkled).

2)In  the meantime take the capsicum caps and by using a straw push the stem from inside to outside slowly with the little white circle as reference so that stem should pop out easily and preserve the caps. (Keep an eye on potatoes as well).

3) Once potatoes are cooked, immediately add them into ice cold water so that you can easily peel off the skin. Now into a bowl add Salt(1/4th teaspoon), Turmeric(1/2 teaspoon) ,5 Spice powder(2-3 teaspoons {optional}), fresh Black pepper(4-6 No's) crushed or powdered, diced Garlic cloves(5),and add boiled potatoes and mix them with a fork until all spices are mixed well into potatoes(Taste the mixture for the heat).
TIP: dried  red chillies powder (1 tablespoon {optional}) OR  Paprika(2 tea spoons {optional}) OR  just add diced small green chillies (2 No's)

4) Remove the seeds and flesh from the capsicum (no seeds must remain in the capsicum), stuff the potatoes mixture into each capsicum in steps.
TIP: Add a tea spoon mixture and press it gently and repeat the process until capsicum is stuffed to the top (2 tablespoons for each capsicum would be enough), place the cap on to the capsicum secure it with toothpicks [see below image for reference].

5)Preheat non-stick pan or a normal pan grease it with little bit of oil, and on MEDIUM flame, add finely diced onion (1 medium sized {optional}) let them cook until onions turn transparent, then on LOW flame, add stuffed capsicum [see image for reference] , add Salt (3/4th tea spoon or according to taste) ,Turmeric(sprinkle on top), Cumin seeds (1/2 tea spoon), White semi-roasted sesame seeds (1/2 tea spoon) and cover the pan for about 8-10 min.

6)After 8-10 min remove the tooth picks from capsicum and let it cook on MEDIUM flame without covering it for 1-2 min.

7) Crunchy  Stuffed Bell Peppers are ready to be served, or add shredded cheese on top and Bake them  in the oven for good 2 min [make sure oven is on low] then after that sprinkle some coriander on top for garnish.
