Veg Pizza|| Vegetable Pizza|| Veggie Pizza No egg, No cheese || Lockdown pizza Prep-Time:- 10-15 min Base Resting Time:- 2 hrs Serves:- 8-10


****** Important tips:- 
1)Yeast must be added to like warm water only ( if water is too cold yeast will not rise if water is too hot Yeast will die) 
2)Yeast must rise before you mix it in the dry ingredients, or else throw it and start again.
3) For 1g of active dry yeast 1 teaspoon sugar 1 kg maida, if you are using instant yeast just leave it aside for longer period. *****


In a bowl 
1 teaspoon sugar 
1 cup lukewarm water 
1g active dry yeast 
Mix well set aside 10min 

Then in a bowl take 1 kg maida i used 3 cups maida 2 tea spoons salt mix well then  pour yeast mixture slowly in this dry ingredients mix well until it combines then add 1/4 th cup room temperature milk mix well until a sticky dough is formed if dough is not sticky add little bit more milk until dough is sticky. 

Then dust a flat surface with maida then scrape that sticky dough on to that surface and knead the dough until it's smooth(15 min easily), now add room temperature 1 tablespoon butter or ghee again knead the dough for good 10 min until the dough becomes absolutely smooth or until dough does not stick to your hands . 
Now tuck the dough edges to the center and let the dough rest in a well oil greased pot (pot must be big as dough puffs up and doubles in size) and cover it with damp cloth or a heavy object. 
Now set it aside for 1hr in a warm, dark place. 
Now check dough will be double in size. 
Now punch the mixture in the middle to remove air then again tuck those edges to the center in the same pot now divide the dough in different parts how ever you want like pav, bread, pizza base,... 

For pizza base take medium size dough ball dust the surface with maida 
Roll it until it is 1/2 cm on all sides, on a hot tawa cook this base for 45 seconds on each side. 

Your Pizza base is ready. 

For white sauce:- 
1 teaspoon ghee or unsalted butter 
1 teaspoon maida
Salt as per taste 
1/2 cup milk

On low flame add ghee, maida mix until no lumps are formed now slowly add milk while mixing and make sure no lumps are formed add salt as per taste, let it boil for 2 minutes (keep mixing every 30 sec).

Your white sauce is ready. This can be used instead of cheese, in macaroni, pasta... 

For pizza sauce:-
Tomatoes-2 medium size
Onion-1 small 
Garlic - 4 small
Coriander
Green chillies- 4 medium size

In a pan add all the ingredients let them cook for 10 min Or until they turn soft, let them cool and grind them into a fine paste. 

In the same pan add 1 teaspoon oil, add that paste on medium flame, add 1 teaspoon turmeric, 2 teaspoon red chilli powder, 1 teaspoon garam masala, salt as per taste, mix well, let it cook until water is evaporated. 

Your pizza sauce is ready. 

Assemble your pizza with your favorite toppings 

Firstly pizza sauce 1 tablespoon, add your favorite veggies, 1 tablespoon white sauce
Bake on 180C for 5 minutes. or place your assembled pizza in a pan and let it cook for 10 min on low flame {To check if your pizza is done, then just touch your white sauce with a steel spoon if it doesn't stick your pizza is ready}

I added little bit lemon and coriander on top while serving.
