Andhra Style Eggplant Spicy Curry Prep-Time: 15-20 min Serves:4
1. Diced Red-Onions-2
cups.
2. Washed and Slit
Eggplant-1 cup (Here medium sized Eggplant are used).
3. In a bowl mix,
Red-Chilli powder-2 table spoons, Salt-1 table spoon, Jeera-1 tea
spoon, Roasted Sesame seeds-1/2 tea spoon, Turmeric-1 tea spoon.
4. Fill the mixture
inside Eggplant as shown below picture.
5. Make sure there must
be no water present inside Eggplant or else this dish may turn mushy in the
end.
6. On Medium flame heat
a tea spoon of oil (oil of your choice) in a vessel and add diced onions, let
it simmer until onions turn translucent.
7. Once they are done
add stuffed Eggplant and sprinkle a dash of salt on top and cover it.
Tip: If any mixture is leftover then you can add it
in the last minute once eggplant is cooked or at least 80% of eggplant is cooked
(the skin of eggplant will change so that you will know when it is cooked)}.
