Hyderabadi Brinjal masala Curry (Vankaya Karam Curry) Prep-Time:10-12 min Serves:5


  1. 1)Cut brinjals into 4 parts without cutting the top (Optional). Soak them in saltwater until masala is prepared
  1. 2)Prepare the masala paste by grinding coriander seeds, khus khus(optional), onion, ginger, garlic, tomatoes, coconut powder, red chilli powder(optional or green chillies), turmeric powder and salt.
  1. 3)Stuff the masala into the brinjals and keep the remaining masala aside.
  1. 4)Heat oil in a large vessel and add mustard seeds and cumin seeds and curry leaves.
  2. 5)After mustard seeds splutter,drop brinjals and the remaining masala in the vessel .Cover the vessel with lid and boil for 10 min. 
  3. 6)While brinjals boil with the masala paste, mix the curry occasionally until brinjals are completely cooked (don't add water)

  1. *Serve with hot rice,roti,naan,bread*
